Inspiration:
In southern Spain, Pedro Ximénez grapes are picked at the end of summer and laid beneath the Andalusian sun. The grapes slowly lose their water. Their skins wrinkle, and the juice inside becomes thick and intensely sweet.

Pressed and made into sherry, years of ageing resulting Pedro Ximénez in rich and almost syrup-like wine, resting in wooden barrels where oak, honey and time slowly become part of the wine. What began as a pale grape beneath the summer sun has become something entirely different - dark, warm, sweet, and shaped by time.
